Banana Brown Butter Baby Bundt Coffee Cake

Ingredients

For the cake:

  • 1/2 cup unsalted butter
  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 1 large egg
  • Just under 1 cup milk
  • 1 1/2 tsp vanilla
  • 1 ripe banana, mashed with a fork

Filling:

  • ¼ cup white sugar
  • 1 tablespoon ground cinnamon

For the glaze (optional):

  • 2 tablespoons unsalted butter, browned
  • 3/4 cup confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 1 to 2 tablespoons milk


Instructions

  1. Preheat oven to 350F. Grease your baby Bundt pan with butter or oil and dust with flour.
  2. In a small saucepan, brown the 1/2 cup unsalted butter. Remove from the heat and pour into a large mixing bowl to cool.
  3. In a medium sized mixing bowl, combine the flour, baking soda, and salt. Whisk well to combine, and set aside.
  4. To the brown butter, add the 1 cup sugar. Add the 1 egg to a liquid measuring cup and then add milk to make one cup. Add this to the mixing bowl with the butter and sugar. Whisk well. Then add the 1 ripe banana, mashed with a fork, and whisk until everything is well combined.
  5. Finally, fold in the flour mixture until just incorporated.
  6. Mix together the sugar and cinnamon for the cinnamon filling.
  7. Pour half the batter into the prepared pan, then sprinkle with cinnamon mixture. Pour the rest of the batter in. Bake for about 45-50 minutes, until risen and golden brown on top, and a toothpick inserted in the middle comes out clean.
  8. You can also make this in a loaf pan by baking for 45-60 minutes.
  9. Let cool in the pan before removing.
  10. To make the glaze: Brown the butter and then combine all the ingredients, adding enough milk to make a spreadable glaze. Glaze and allow to cool.
